I tend to set tubes a little cool but not dead, I use master volume amps usually so the preamp does the heavy lifting, the power section just makes it louder. Hot bias doesn't equal hot tone, I think it sounds like crap and tends to make tubes manifest qualities which aren't sonically good to hear. The previous owner had some person running the bias all the way up and because of it the tubes were cooked and the amp sounded like ****. I set my Rivera Fandango the same exact way, I started all the way down as low as it could go and slowly raised it until I hit a sweet spot.

I was able to set this by ear and confirm it with a meter later. Theres a reason why grid leak bias isnt used in modern tube guitar amps it simply wont work if theres an active device (e.g. I noticed with the Victoria amps I owned that once i set the bias much above 33ma that the low end filled out too much and the amp sounded too tubby. What happened every time with every VIctoria was there was a sweet spot where the amp wasn't sluggish, but it also wasn't congested sounding (running too hot). The amp should get to a point where the volume jumps a little but the tubes are still not cooking. Once you know what direction cool is play the guitar and raise the bias slightly (I think it's raise, it's getting hotter).
